image: Making Sushi at Sushi Cat Making Sushi at Sushi Cat

Sushi Cat could welcome a full house as members of the SCCE gathered for an evening of Sushi making as well as enjoying the results of our learnings.

As the evening went on, the SCCE apprentices turned out to be true talents in handling the sushi-meshi (the special sushi rice), the nori (the seaweed sushi wrapper) and all the other fresh and tasty raw materials needed for creating a delicious set of sushi’s like Maki, Nigiri and Uramaki.

The outcome was indeed delicious and as an extra bonus we also got the opportunity to taste Japanese beverages like Ramune Lemonade, Kirin Ichiban Beer and Choya Sake.

Sushi Cat is a unique, modern and colorful sushi bar concept created by the Swedish-Estonian couple Sven-Olof Englund and Evelyn Mikomägi.

- We got inspired by the young pop culture in Japan, featuring Manga, Animé, Cosplay and other playful elements that create a cheerful and inspiring atmosphere. A sushi experience with us is fresh, fast and fun, said Evelyn.

- We believe that Sushi Cat has a winning concept which in many ways completely redefines the traditional sushi experience. In taking it further, we offer the full concept on a franchise basis where Sushi Cat provides extensive training in all aspects of operations. In this context we talked to Karolina Ullman, managing partner at MAQS Law Firm in Tallinn and also SCCE’s newly appointed chairman, and followed her advice to cooperate with Scandinavia’s leading franchise experts, the Franchise Group in Sweden, added Sven-Olof.

- In addition to the Sushi Cat bar at Roosikrantsi 16 in Tallinn, we also offer catering for any occasion. If you want to make the event extra exciting we can of course offer members of our Cat Crew to come and prepare and serve, dressed in their fancy costumes, said Evelyn.

On behalf of the SCCE Council I would like to thank Evelyn Mikomägi, Sven-Olof Englund and the entire Cat Crew at Sushi Cat for a very nice, cozy and creative evening. My thanks also go to the SCCE members who made our evening reach new heights in terms of both togetherness and as a delicious culinary experience.
